Asparagus Soup

A fresh and easy asparagus soup, full of flavor.


  • 1 onion, chopped
  • 4 tsp (20 mL) margarine
  • 2 Tbsp (30 mL) flour
  • 1 cup (250 mL) vegetable broth, low-sodium
  • 1 pound (450 g) fresh asparagus, trimmed and coarsely chopped
  • 1 dash garlic powder
  • 1 dash white pepper
  • 1 cup (250 mL) skim milk


  1. In a medium saucepan, melt the butter and add the onion. Cook over medium heat until onion softens.
  2. Stir in flour. Add vegetable broth, a little at a time, stirring until smooth.
  3. Add asparagus, garlic powder and white pepper. Simmer for 10 minutes. Stir in the milk. Simmer for an additional 5 minutes.
  4. Puree in a blender. Serve hot.
